Sometimes I want to do a little something more with things like tuna fish. I love tomatoes and had a couple of beautiful big ones I wanted to do something different with. thought I’d try stuffing them with tuna fish. It turned out to be pretty easy, here’s how I did it.
Start with a large, ripe, washed tomato.

Using a sharp knife, cut a circle on the top of the tomato. Don’t cut too deep, just enough to cut all of the way through the tomato. Save the top.

Scoop out the insides of the tomato. Try to get all of the seeds out. Try to be careful and not poke through the side of the tomato.

Once the inside of the toamto is empty, spoon tuna into the open cavity.

Once the tomato is stuffed, put the top back on the tomato, or top with a garnish.

That’s it! Serve right away, or store in refrigerator until ready to serve.
Serve with salt and pepper to taste.

On lettuce with perchance a sprig of parsley, a good diet friendly lunch even for a diabetic.
