Instant Pot Turkey Stuffed Peppers are an affordable meal that takes little prep and minimal work. Using an electric pressure cooker means the meal is made in less time than if you used an oven and you don’t heat up the house.
My husband has always enjoyed stuffed peppers. His mother’s stuffed peppers were his favorite meal. I make them for him occasionally, but almost never in milder months because I don’t like to use the oven and heat up the kitchen. I got a nice deal on some ground turkey and some green peppers recently. I decided to use them to make hubby some turkey stuffed peppers for Valentine’s Day. While it is cold out now, I love cooking with an electric pressure cooker and wondered how stuffed peppers would turn out if made there. Voila Instant Pot Turkey Stuffed Peppers! This was a very affordable meal. The pound of ground turkey was on sale for $1.49, the package of 5 green peppers $2.85 and the jar of sauce $1.49. I had everything else on hand. The turkey has a lot less fat than the ground beef that I usually use in stuffed peppers. The ground turkey had a bit milder flavor than ground beef, which I atttribute prtially to there being less fat. Hubby prefers sauces that aren’t red when given the choice, so I decided to use cheese pasta sauce instead of tomato sauce. Here’s how I make Instant Pot Turkey Stuffed Peppers.
Instant Pot Turkey Stuffed Peppers
- electric pressure cooker (I used a 6 qt Instant Pot)
- large mixing bowl
- measuring cups
- measuring spoons
- silicone cooking spoon
- Instant Pot trivet
- 5 medium-large green bell peppers, hollowed and seeded
- 1 pound ground turkey
- 1 cup cooked white rice
- 1/3 cup Italian breadcrumbs
- 1/2 cup cheddar pasta sauce
- 1/2 cup onion, minced
- 1 egg, beaten
- 2 tbsp garlic powder
- 2 tbsp dried parsley flakes
- 2 tbsp black pepper
- 1-2 tsp chili powder, depending on how much flavor you want to add
- 1/2 cup water
Cut the tops off of the peppers and then hollow them out and remove the seeds.
Place the ground turkey, cooked rice, bread crumbs and seasonings into a bowl.
Add the egg to the bowl and combine thoroughly.
Add the 1/2 cup of sauce to the bowl and mix thoroughly.
Divide the mixture equally amongst the 5 peppers.
Place the water into the bottom of the pot.
Place the trivet onto the bottom of the pot.
Take the 5 uncooked stuffed peppers and place them onto the trivet in a standing position with the open stuffed ends on the top.
Place a teaspoon of cheddar sauce on the top of each pepper.
Place the lid on the Instant Pot and close to seal.
Set the Instant Pot to cook on manual high pressure for 15 minutes.
Once the cooking cycle has finished, allow pressure to release naturally for at least 5 minutes before doing a quick pressure release.
