You may or may not have noticed my current fascination with cake mix cookies. I have errands and appointments almost daily now, and and one of the night classes I teach has started up. So time is at a premium. I wanted to make q quick batch of cookies. I had a box of spice mix but not enough oil. So I switched applesauce for the vegetable oil. It made them slightly less crinkle-y than the other cookies I;ve made but it did give them apple flavor, resulting in a sort of applesauce spice cake mix cookie. Hubby enjoyed them but thought they needed icing. So if you’re into icing, a white icing might make you happy. Here’s how I make them.
Apple Spice Cake Mix Crinkle Cookies
The recipe makes 18-24 cookies, depending on how large you make the cookies. My batch made 24 nicely sized cookies.

- 2 cookie sheets lined with parchment paper. Alternatively, you could use a silicone baking mat.
- ice cream scoop or cookie scoop
- wire cooling rack
- mixing bowl
- pot holders
- 15.25 oz box of spice cake mix (I used Betty Crocker)
- 4 oz cinnamon applesauce
- 2 eggs
- 1/4 cup of powdered sugar
Preheat the oven to 350 f.
Place cake mix, eggs and oil in a mixing bowl and combine thoroughly.
Place the powered sugar into a smaller bowl.
Place each ball into the powdered sugar and rotate to coat completely.
Place the balls onto the cookie sheet.
Bake for 10 minutes.
Let sit on the cooling rack for a few minutes before serving.
