Ranch Spinach Dip Served In Jack-O-Lantern Peppers will be the hit of your Halloween gathering because they make the belly and the eyes happy!
That is hubby’s favorite vegetable ever.
He absolutely loves spinach. He also loves dip, and yes, spinach is one of his favorites. Dole is a brand you can often find in my kitchen, in the cabinets and in the fridge. The folks at Dole recently shared a couple of recipes for me in an effort to show that Halloween snacks and food can be fun and healthy. Take these Orange and Green Meanies, one of the recipes that was shared with me.

Feeling inspired, I decided that I wanted to try my hand at making something for hubby. We love snacks here, including dip. I decided that I wanted to try making a dip served in peppers cut like jack-o-lanterns. I also decided that I wanted to try and make it a little healthier, so that I was going to use his favorite vegetable spinach to make it. Here’s how I did it.
Ranch Spinach Dip Served In Jack-O-Lantern Peppers

- cutting board
- saute pan
- mixing bowls
- 2x 6 oz bags Dole Baby Spinach
- 2x large orange peppers (it’s helpful if they lean slightly backwards when sitting on a flat surface)
- 1x 5.3 oz container plain greek yogurt
- 1x 1 oz packet ranch dressing
Chop up the spinach. I chopped mine into small pieces.
Heat the spinach in a pain for 3-4 minutes, until the spinach starts to break down and wilts.
Put the spinach into a bowl and marvel at the difference in size from before to after and how much it has shrank.
While the spinach is cooling, cut your peppers into jack-o-lanterns using a paring knife. My jack-o-lantern carving skills leave a bit to be desired. If you can leave a couple of teeth it would actually probably be helpful. If no no biggie. My peppers were big, smiling toothless fellows.
Be sure to rinse them out, making sure there aren’t any seeds left in there.
Add the yogurt to the bowl and stir.
Add the dip mix to the bowl and mix very well.
Put the dip into the fridge for 30 minutes or more, until you are almost ready to serve.
When ready to serve spoon the dip mixture into the insides of the peppers.
Serve and enjoy.
PS! there’s one more thing about this dip recipe. No dishes to wash! Just eat the peppers!
