Instant Pot Penne Alla Vodka With Chicken Recipe From Val's Kitchen

I have found myself really in the mood for pasta in vodka sauce recently. It’s one of my favorite pasta sauces. Ironically, it’s also a pasta sauce that I’ve never tried making from scratch. Now being that it’s summer, it’s been pretty hot out. This means that I loathe to turn on the stove and oven, and avoid doing so whenever possible. This means the Instant Pot is getting a workout. Instant Pots are terrific for preparing comfort food. I would definitely consider pasta in vodka sauce comfort food. Instant Pot Penne Alla Vodka coming right up!

Once I decided I was going to make pasta with vodka sauce, all I had to do is select the pasta I was going to use. For a special sauce like this, I had to go with Academia Barilla. If you’ve been reading From Val’s Kitchen for a while then you may recall Academia Barilla. It is a line of ultra-premium restaurant-quality pasta of 100% Italian Origin. Two things make this pasta so special. First, the pasta is made with Italian Aureo durum wheat, a single high quality grain variety developed by Barilla. Second, the pasta is extruded with 100% bronze dies, instead of more commonly used teflon. This gives the pasta a rough, homemade texture that allows sauces to cling to the it, delivering maximum flavor in every bite. The line consists of four of the most common Italian pasta cuts – spaghetti, linguine, penne rigate, and farfalle.

The dish came out even better than I expected. I started off with my friend Karen’s stove top recipe and made adjustments for cooking in the Instant Pot. The creamy sauce really clung to the thick pasta, resulting in a delicious combination that immediately became one of my favorite dishes. Here’s how I make it.

Equipment Needed

  • Instant Pot
  • measuring cups
  • measuring spoons
  • silicone cooking spoon
  • knife
  • cutting board

Instant Pot Penne Alla Vodka With Chicken Recipe From Val's Kitchen


  • 1 lb uncooked Academia Barilla penne pasta
  • 1 lb chicken tenders
  • 28 oz can crushed tomatoes (I used the variety seasoned with basil, garlic & oregano)
  • 2 cups chicken broth
  • 1/2 cup vodka
  • olive oil
  • 1 cup heavy cream
  • 2 tsp Italian seasoning (divided into 1 tsp and 1 tsp)
  • shredded parmesan cheese

Cut the chicken into bite sized pieces approximately the same size as the penne.

Cover the bottom of the Instant Pot with a thin layer of olive oil.

Saute the chicken until it’s white and no longer raw.  Be sure to stir frequently.

Add the vodka and cook for 3 minutes, stirring frequently.

Add the penne, chicken broth, seasonings, and crushed tomatoes. Be sure to cover all of the pasta.

Place the cover onto the Instant Pot. Set to cook on manual high pressure for 4 minutes.

As soon as the cooking cycle has finished, do a quick pressure release.

Stir the contents of the Instant Pot well.

Add the cream and Italian seasoning and stir thoroughly.

Serve immediately, sprinkling parmesan cheese to taste.

  1. I would have to make this the old fashion way no instanta pot in my house. We love this type of pasta but since we don’t drink I would leave out the alcohol and add something else.

  9. I would make Academia Barilla penne pasta and cheese with bacon. Made the same way I prepare mac and cheese just with penne pasta instead of macaroni .

  10. Just wondering if the tomatoes needed to be seasoned with something. It looks like your ingredient list is cut off (“28 oz can crushed tomatoes seasoned with”). Also, do the seasonings get added before coming to pressure or after. Your recipe says to add them with the penne, chicken broth, etc and then also with the cream. Just looking for clarificaiton.

    1. I apologize, I clarified the recipe. I use canned tomatoes seasoned with basil, garlic & oregano. I add 1 tsp Italian seasoning when I add the penne and the other 1 tsp Italian seasoning when I add the cream.
