There’s a restaurant in the area that serves a chicken dish I really enjoy. The dish is a chicken breast covered with BBQ sauce, bacon and cheese. It’s served with mashed potatoes. I had it on my mind for like three days this week, so thought it would be fun to cook up a pie inspired by the dish. I tried doing this once with a mashed potato and wasn’t totally thrilled with the consistency, so this time I switched to using a scalloped potato, which worked out perfectly. I did think about making this a two crust pie, but decided it would be better with just one. Here’s how I made it.
Easy BBQ Chicken & Potato Pie
INGREDIENTS
- 1 pie crust
- 1x 4.7 oz box Au Gratin Potatoes (I used Betty Crocker)
- 9 oz chicken breast (I used Perdue Shortcuts)
- 1/4 cup shredded bacon
- 1x 14.5 oz can green beans
- 1/4 cup BBQ sauce
INSTRUCTIONS
Preheat oven to 400 f.
Make the potatoes according to the instructions. I microwaved mine for 15 minutes.
Place crust in bottom of 9 inch pie plate.
Cut chicken into cubes or smaller pieces.
Add chicken, green beans and bacon to the cooked potatoes. They will absorb the extra liquid.
Place the filling into the pie crust.

Bake for 20 minutes and remove from oven.
Let sit for 5-10 minutes before serving. You can serve it sooner and it will taste fine but it will be sloppy when you cut it.
