
I am really getting into grilling things. I think I’ve come a long way in the past 6 week, prior I was rather afraid to use the grill by myself. Now I’m grilling all sorts of things at all sorts of hours. This week I decided it would be fun to play with skewers. I thought I’d start simple, so my first kabob was just simple breaded chicken. We were very pleased with the results. Here’s how I made them.
Crunchy Grilled Chicken Kabobs
INGREDIENTS
- 1.5 lbs chicken tenderloins
- 3/4 cup seasoned panko bread crumbs
- 1/4 cup parmesan blend shakey cheese
- 1 egg
INSTRUCTIONS
Preheat grill.
In a bowl combine the panko bread crumbs and the shakey cheese.
Dip the chicken into the egg.
Dip the chicken in the panko mix.

Place the breaded chicken on skewers.

Grill for 10-15 minutes, turning occasionally. I tried grilling using indirect heat on top and direct heat on the bottom, the top with indirect heat was much better.

Serve with your favorite dipping sauce.

I thought a great side for this was macaroni salad. You could go with whatever you like.
