Recently I wanted to make rice balls but I wanted them to be a little different. This is what I came up with.
INGREDIENTS
- 1 1/2 lb ground beef
- 2 cups rice, cooked
- 4 oz shredded cheese
- 26 oz marinara sauce
- 1 1/2 cup potato flakes
- 1 egg
DIRECTIONS
Brown ground beef.
Preheat oven to 350 F.
In large bowl, combine the cooked beef, rice, shredded cheese and 1 cup of sauce.

Roll the mixture into meatballs.

Refrigerate the meatballs for 30-60 minutes.
Remove meatballs from refrigerator.
Quickly dip meatballs in the egg. Don’t soak them, just get them a tiny bit damp.

Dip or roll the meatballs in the potato flakes.

Bake for 20 minutes, turning over halfway.
Heat the remainder of the sauce while they’re in the oven.
Remove from oven.
Serve meatballs immediately with the remainder of the sauce.

I've never tried breading with potato flakes before but this makes me really want to try. I also like that you baked them afterwards instead of frying. Much healthier that way. Thanks for sharing.
