Last week I was invited to create a New Jersey cookie and participate in the BHG Live Better State Cookie Contest. I came up with valmg’s Berry Jersey Cookie. This cookie is a soft buttery sconey cookie filled with berries from the Garden State including cranberries and blueberries.
valmg’s Berry Jersey Cookie
- 2 cups all-purpose white flour
- 1/2 cup sugar
- 1/2 cup brown sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 stick butter (softened)
- 1 egg
- 1/3 cup milk
- 1 teaspoon vanilla
- cranberries (fresh or dried, I used Craisins)
- blueberries (fresh or dried, I used Craisins)
Combine flour, both sugars, baking powder and salt in a large bowl. Mix well.
Combine butter, milk, egg and vanilla in a second bowl.
Pour the contents of the wet ingredient bowl into the dry ingredient bowl. Mix well.
Slowly add in the cranberries and blueberries. When it looks like you’ve added enough, add some more.
Put the dough in the fridge to chill for 45 minutes.
Preheat the oven to 375.
Spoon cookie dough onto cookie sheets. I used a BHG Cookie Sheet. I loved it, the pan was well made, cooked well and cleaned up even better.
Bake for 15 minutes, until cookies are golden brown on the edge.
Cool and serve.
My original idea for my entry into the contest was to make this cookie as a cookie pop. I wanted to ice it in white and then put the map of New Jersey in green on top of that in powdered sugar. Sadly, my picture of the state turned into a great big green blob. I just couldn’t make it work.
So I entered the cookie pop, nude.
