Instant Pot Whole Chicken And Potatoes


5 lb whole chicken * 4-5 large potatoes * 1.5 cups chicken broth * olive oil * 2 tsp Italian seasoning * 2 tsp garlic powder * 2 tsp onion powder * 2 tsp paprika


Plug the Instant Pot electric pressure cooker in and place the insert in place. Cover the bottom of the pot with olive oil. Be sure the cavity of the chicken is empty, then rinse the chicken and pat it dry. Use a basting brush to coat the entire outside of the chicken with olive oil. Set the pressure cooker to saute. Sprinkle the seasonings as desired on both sides of the chicken. Place the chicken into the pot and lightly brown both sides. Use a carving fork placed into the large cavity to help you lower it into the pan as well as to turn it over. Once both sides have browned, use the carving fork to remove the chicken from the pot and set aside. Pour 1/2 cup of chicken broth into the pot and deglaze any seasonings that may have stuck to the bottom. Pour 1.5 cups of chicken broth into the pot. Place the potatoes into the pot. Return the chicken to the pot, resting it on top of the potatoes. Place the lid onto the pressure cooker and close to seal. Set the pressure cooker to cook for 25 minutes on manual high pressure. Once the cooking time has finished, let the pressure release naturally for 15 minutes.
