Pressure Cooker Steel Cut Oats Breakfast Bowls

Ingredients

1 cup steel cut oats * 3¼ cups water * 2 cups Greek or coconut yogurt * 1½ tbsp chia seeds * 1 tbsp real maple syrup, plus additional for serving * 1 cup fresh strawberries, hulled and cut into chunks * 1 cup fresh blueberries, rinsed and patted dry * nonstick cooking spray

Instructions

Plug in the pressure cooker. Spray the pressure cooker insert with nonstick cooking spray. Add the steel cut oats and water and stir to combine.Place the lid onto the pressure cooker and close to seal. Set the pressure cooker to cook on manual high heat for 10 minutes. Place the yogurt, chia seeds, and maple syrup into a small bowl and stir to combine, then set aside. Once the cooking time has finished cancel the cooking cycle and let the pressure release naturally for 15 minutes. If any pressure remains after that do a quick pressure release. Carefully remove lid and stir the contents to combine. Transfer the cooked oats to individual serving bowls. Heap the oats a little higher on one side of the bowl and spoon the yogurt mixture onto the other half. Arrange the strawberries and blueberries between the two halves for a nice presentation. Serve immediately with additional maple syrup on the side, if desired. Enjoy!
