Instant Pot Tomato Tortellini Soup
8 cups chicken broth * 2x 12 oz bags frozen cheese tortellini * 28 oz crushed tomatoes seasoned with basil, garlic and oregano * 2 tsp Italian seasoning * 1 cup light cream * 1/2 cup grated parmesan cheese
Plug the pressure cooker in. Pour the chicken broth into the pot. Add the tortellini to the pot. Add the crushed tomatoes and Italian seasoning to the pot. All (or almost all) of the tortellini should be covered. Put the lid onto the pot and close to seal. Set the Instant Pot to cook for 2 minutes on manual high pressure. Once the cooking time has finished do a quick pressure release. Add the cream and grated cheese and gently stir. Serve and enjoy!
