Instant Pot Lasagna Soup
1.25 lb ground beef * 1 lb lasagna noodles * 28 oz can diced tomatoes (I used the variety seasoned with basil, garlic and oregano) * 24 oz jar pasta sauce (I used Ragu Chunky Tomato, Garlic, Onion) * 8 cups beef broth * 8 oz shredded mozzarella cheese * 1 tsp garlic powder * 1 tsp onion powder
Place the Instant Pot on saute and brown the ground beef. Break the lasagna noodles into small pieces, then put them into the Instant Pot. Place the noodles in the Instant Pot on top of the ground beef, followed by the beef broth, diced tomatoes and pasta sauce. Set the Instant Pot to cook on manual high for 11 minutes. Let the Instant Pot naturally release pressure. Add the shredded mozzarella cheese to the Instant Pot and stir well. Add a dollup of ricotta when putting into bowls. Serve and enjoy!
