Gluten-free Instant Pot Pizza Meatloaf
3 lbs ground beef * 1/2 cup instant mashed potato flakes * 1 cup parmesan cheese * 6 slices mozzarella cheese * 1 tsp onion powder * 1 tsp garlic powder * 1 tsp dried oregano * 1/4 jar pizza sauce * 1 cup water * OPTIONAL - pepperoni, olives, onions, mushrooms or other pizza toppings
Place all of the ingredients except the sliced mozzarella cheese and the water into a large mixing bowl and combine thoroughly. (NOTE - You could put some minced pepperoni into the meatloaf mix if you like.) Pour one cup of water into the Instant Pot and then place the trivet into the Instant Pot. Spray the pan with nonstick cooking spray. Put half of the meatloaf mixture into the pan. Put 4 of the mozzarella slices on top of the meat. Place the remaining half of the meatloaf mixture on top of the cheese. Pinch and smooth around all of the edges to make sure that the meatloaf is closed. Set the Instant Pot to cook on manual high 30 minutes. Preheat the oven to 350 f. Place the remaining 2 slices of mozzarella cheese on top of the meatloaf. Spread a few dots of pizza sauce on top of the cheese. If you want to place a few pizza toppings on top of the meatloaf such as pepperoni or peppers, place them on now. Bake for 5 minutes until the cheese on the top has melted. Serve immediately.
