Brown Butter Chocolate Walnut S'mores Cookies
2 sticks unsalted sweet cream butter, softened * 1 cup dark brown sugar, packed * 1 1/2 tsp pure vanilla extract * 1/2 tsp molasses * 1 cup sugar * 2 large eggs, only 1 separated * 1/2 cups flour * 1 tsp salt * 1 tsp baking soda * 1 cup chopped walnuts * 1 cup semi sweet chocolate chips * 1 bag mini marshmallows * 1 bag Ghirardelli melting chocolate wafers* 3 cups of crushed graham crackers
Preheat the oven to 350 f. Cream the butter, sugars, molasses, and vanilla in a stand mizer or with a hand mizer in a large mixing bowl. Add 1 egg and the egg yolk and mix until combined Add the flour, salt, and baking soda and mix until combined Stir in the walnuts and chocolate chips. Use an ice cream scoop to scoop some batter onto a cookie sheet fitted with the parchment paper about 2 inches apart. Bake in the oven for 8-10 minutes. Once all the cookies are baked, turn the oven to a low broil. Add a handful of mini marshmallows to the tops of the cookies and place back into the oven for 2-3 minutes or until the tops of the marshmallows start to bubble and brown. Remove from the oven and let cool. While the cookies are cooling off, melt the chocolate wafers and pour the graham cracker crust into a bowl. Once the chocolate is melted, did half of the cookie into the chocolate and lightly tap on the side on the pot to remove any excess. Dip half of the chocolate half into the graham cracker crust and then place onto the cookie sheet with the wax paper. Once all the cookies are dipped, let sit for 10-20 minutes until chocolate is solid. Enjoy!
