Sloppy Joe Quesadillas


1/3 - 1/2 cup sloppy joe mixture * 2 street tacos tortillas (I used Mission white corn which are gluten-free) * 2 oz shredded cheese (taco, mexican, cheddar 0r whatever your favorite is will work) * butter


Butter one side of one tortilla and place it butter-side down in the skillet. Place the sloppy joe mixture onto the taco. Sprinkle the cheese on top of the sloppy joe. Butter one side of a second tortilla and place it butter-side up on top of everything else. Heat over medium flame until golden brown, turning over occasionally. Serve immediately.
