Soft & Chewy M&M Oreo Cookies
1 stick unsalted butter, room temp * 1 1/4 cups all-purpose flour * 1/2 cup light brown sugar, packed * 1/4 cup granulated sugar * 1/4 cup instant vanilla pudding mix * 1 large egg * 2 tsp vanilla extract * 1/2 tsp baking soda * 1/4 tsp salt, or to taste * 3/4 cup M&M’s Minis, plus more for adding to dough mounds * 3/4 cup Oreo cookies, roughly chopped
Place the butter, sugars, egg and vanilla into the bowl of the stand mixer with a paddle attachment or a large mixing bowl. Beat on medium-high speed until well combined. Scrape down the sides of the bowl. Slowly add the flour, pudding mix, baking soda, and salt to the bowl, and beat on low speed until just combined. Add 1/2 of the M&M’s minis and the chopped Oreos, and beat on low speed until just combined. Use a large cookie scoop to roll the dough into balls, flattening them slightly. Cover the cookie tray with plastic wrap, and refrigerate for at least 3 hours. Preheat oven to 350 f degrees. Line a baking sheet with a silpat or parchment paper. Place the dough onto the baking sheet, spaced at least 2 inches apart Bake for about 8 to 10 minutes. Remove the tray and add the remaining M&Ms minis and chopped Oreos to the top of the cookies. Lightly press in. Place back in the oven for an additional 2-3 minutes Remove the cookies from the oven and allow to cool. Enjoy!
