Cut the chicken into bite sized pieces approximately the same size as the penne.
Cover the bottom of the Instant Pot with a thin layer of olive oil.
Saute the chicken until it's white and no longer raw. Be sure to stir frequently.
Add the vodka and cook for 3 minutes, stirring frequently.
Add the penne, chicken broth, seasonings, and crushed tomatoes. Be sure to cover all of the pasta.
Place the cover onto the Instant Pot. Set to cook on manual high pressure for 4 minutes.
As soon as the cooking cycle has finished, do a quick pressure release.
Stir the contents of the Instant Pot well.
Add the cream and Italian seasoning and stir thoroughly.
Serve immediately, sprinkling parmesan cheese to taste.
