Meatloaf is a favorite around here. It is in a lot of houses, but some people get tired of the same old thing over and over again. Recently while baking I thought of a great idea to change up your day to day meatloaf and make it fun – Meatloaf Muffins. As I’ve mentioned previously, I LOVE mashed potatoes but I don’t love the work that accompanies them. This recipe makes use of Betty Crocker boxed potatoes, which are tasty, affordable, and easy to make.
- 1 lb ground beef (plus your meatloaf ingredients)
- 1 package Betty Crocker Creamy Butter Mashed Potatoes (plus its ingredients – 1 2/3 cups hot water, 1/2 cup milk, 2 tbsp butter))
- 2-4 oz shredded cheddar cheese
- 4-8 oz sour cream and onion dip (you can also use cream cheese with onions and chives if you prefer)
- @ 2 oz bacon bits
- cherry tomatoes (1 for each muffin)
Preheat the oven to 350.
Make your meatloaf mix in a bowl as you usually would.
Using an unlined and ungreased large muffin tin pan, fill the muffin tins about 3/4 of the way with meatloaf mix.
Put the muffin pan into the oven and bake for about 35 minutes, or until they’re almost done.
While the muffin pan is in the oven, make the instant mashed potatoes according to the instructions on the box.
Add in 4-8 ounces of the sour cream and onion dip and stir well.
Add the shredded cheddar cheese to the mashed potatoes and stir well.
Add the bacon bits to the mashed potatoes and stir well.
Leaving the oven on, remove the muffin pan from the oven and place in work area.
Leaving the meatloaves in their tins, spoon the mashed potatoes over top.
Put the muffins back in the oven for about 5 – 10 minutes, long enough to let the meatloaf finish cooking and for the cheese to melt.
Remove pan from oven and let sit for a few minutes.
Remove muffins from pan. I did this with a fork, going around the side and then lifting from the pan.
You should have something that resembles a cupcake.
Put a cherry tomato on top and serve with a side of vegetables.
You can change this up easily to suit your own families tastes. The potatoes are so easy to incorporate because they require almost no work.The great thing about this meal is that you’re using your potatoes as part of a meal that children will find fun and that guests will be amused with.
