Taco Beef Rice Casserole


  • One pound ground beef
  • 3x 28 ounce cans Diced Tomatoes (I like the Basil, Garlic & Oregano variety)
  • 2 1/2 cups Minute Rice
  • 2 cans sweet corn
  • 2 packages Old El Paso Taco Seasoning Mix (I like the Cheesy variety)
  • Shredded cheese (optional)


Brown the ground beef and place into crockpot.

Add in the uncooked Minute Rice.

Add in the 3 cans of tomatoes.

Add in the 2 cans of corn.

Add in the contents of the Taco Seasoning packets and stir.

It will look soupy, something like this.

Taco Beef Rice Crockpot Casserole Uncooked

Cook on high for 4 hours.

Serve hot.

You can sprinkle shredded cheese over the top if you like.
