Nutty Pumpkin And Spice Muffin

NUTTY PUMPKIN AND SPICE MUFFINS – Perfect served warm with a glass of milk or tea, especially when the weather turns colder! Makes 12 muffins.

Ingredients:

  • 1 1/2 Cup KAMUT(R) Khorasan Flour
  • 1 Teaspoon Baking Powder
  • 1/2 Teaspoon Baking Soda
  • 1/2 Teaspoon Sea Salt
  • 1/4 Teaspoon Ground Cloves
  • 1/4 Teaspoon Ground Cinnamon
  • 1/4 Teaspoon Ground Nutmeg
  • 3/4 Cup Sweetener of choice
  • 2 Large Eggs
  • 3/4 Cup Canned Pumpkin
  • 1/4 cup Oil of choice
  • 1/2 Cup Chopped Walnuts
  • 1/3 Cup Raisins

Preparation:
Preheat oven to 400 degrees. In mixing bowl, combine dry ingredients. Combine wet ingredients; mix well. Stir into dry ingredients just until moistened. Spoon into muffin cups or greased muffin tin. Bake for 18 to 20 minutes.

Glad the recipe calls for canned pumpkin. My one culinary attempt with the real fresh vegetable was a disaster.
