Simple Vegetarian Dinner

If you’re looking for a meatless meal that satisfies, look no further than this easy-to-make dish. It’s a great side, or can even stand alone as a meal by itself.

To make this dish, preheat your oven to 350 F.

Chop up some veggies, herbs and toss them in some olive oil. For this particular dish, pattypans, peppers, onions and tomatoes were used. Mushrooms, eggplant, garlic and plenty of other veggies also work well.

Next, add your favorite fresh herbs. Basil, parsley and oregano work quite well.

Simple Vegetarian Dinner

Mix all your ingredients and wrap everything in foil on a baking dish.

Bake at 350 F for about 40 minutes or so.

Drizzle with your favorite balsamic reduction and serve over rice or quinoa.

Love veggies especially sweet potato fries. This dish is tempting. Topped with mozzarella for protein, it would be a meal for me to savor.

Something as simple as throwing veggies in the oven really makes a huge difference. Love it! And will definitely add some fresh mozz on top 🙂
