One day about a month ago I wanted to make my son a sandwich. I had no gluten-free bread available, but I did have some corn tortillas I’d been planning on using for a recipe. I decided to try making the grilled cheese using tortillas. He loved it and eats it regularly now. When I was offered the opportunity to check out the Tortilla To The Rescue Cookbook I accepted because I hoped it would be a great place to find other ideas on things I could make for him.

The beginning of the book includes a little background information on tortillas, as well as methods for warming, preparing and storing them. Recipes are easy to understand and contain a brief description. Recipes I’m looking forward to trying and/or adapting include Bacon Egg and Cheese Roll, Baked Wontons, Grilled Stacker, Tortilla Crusted Stuffed Chicken Breasts, Chilaquiles Casserole, Burrito Casserole, and Broccoli Chicken Casserole among others. There are no photos in this cookbook. The book provides a lot of different ways to use tortillas, including as a substitute for bread. This book would be great for anyone that likes tortillas or would like to use them more in their day to day cooking.

I’ve made lots of things with tortillas, even homemade flour and corn tortillas! One of my kids’ favorite snack is an american cheese quesadilla on a flour tortilla dipped in ranch dressing. Sounds a little weird, but they love it!
