I’m always on the lookout for gluten-free foods that are quick and easy to prepare. I have nothing against making breakfast foods such as pancakes from scratch but on a busy work day there just isn’t always time. Recently we got to try a new product – Bisquick Gluten-free baking mix.

Bisquick Gluten-free Baking Mix was easy to use. We made some pancakes. All we had to do was add milk, oil and egg to the mix and then cook it. The pancakes tasted very much like pancakes made with regular Bisquick, which I have made before. I did try the Pancake Pen, which is neat. Make sure that you shake really well if you use this, so the mix doesn’t get stuck and come out too thin. What I like best about the Bisquick Gluten-free Baking Mix is that it can be used in all sorts of gluten-free recipes, not just pancakes. Besides pancakes and waffles it can be used to make pies, biscuits, cakes, pizzas, appetizers, entrees and more.

Oh I hope that I can win this! I have made pancakes with the GF Bisquick and I’m torn between making biscuits or noodles for homemade chicken and noodles. My grandmother made homemade chicken and noodles and as a child I helped her measure the Bisquick and roll them out. Since finding out I have Celiac Disease, I have not been able to recreate her noodle recipe and feel her in my kitchen with me.

Curious–what flours does it use in its gluten free mix if not rye, wheat, barley and, perhaps oatmeal?
