Pumpkin Spice M&M Chocolate Chip Cookies
Fall may officially start next week but the temps here have started cooling already. I’ve turned the central air off. This weekend I’ll be rotating the drawers in my youngest son’s room, and starting to wash things like sweaters that have been unused for several months. Changes are evident in the stores too, they have been for a couple of weeks. Pumpkin flavored things are everywhere. Have you seen the Pumpkin Spice M&M’s that have appeared? Pumpkin Spice M&M Chocolate Chip Cookies are soft and chewy cookies that combine lots of rich chocolate with just a hint of pumpkin spice. These colorful homemade cookies have a really nice balance of flavor and texture.
Here’s how to make Pumpkin Spice M&M Chocolate Chip Cookies.
- 2x cookie sheets
- parchment paper
- large mixing bowl
- measuring cup
- measuring spoons
- medium ice cream scoop
- cooling rack
- ¾ cup unsalted butter, softened
- ¾ cup light brown sugar, packed
- ¼ cup sugar
- 1 large egg
- 2 cups flour
- 2 tsp cornstarch
- 1 tsp baking soda
- ½ tsp kosher salt
- 1 cup chocolate chunks
- 1 cup semi sweet chocolate chips
- 1 ½ cups pumpkin spice M&M’s
Preheat the oven to 350 degrees f.
Line two cookie sheets with parchment paper.
Place the flour, cornstarch, baking soda and salt into a large bowl and whisk together.
Place the butter, brown sugar and sugar into a large bowl and beat together until light and fluffy
Beat in the egg until combined.
Gradually beat in the flour ingredients until combined and a soft dough forms
Fold in the chocolate chunks, chocolate chips and pumpkin spice
Using a medium ice cream scooper, scoop cookie dough onto the cookie sheets
Bake in the oven for 12 – 15 minutes or until lightly golden brown
Remove from the oven and allow to cool for a few minutes before enjoying!
