Pumpkin Chocolate Chip Bars
Fall really brings out an increased number of recipes featuring pumpkin. Today I have another one for you – pumpkin chocolate chip bars! These moist bars takes the flavor of pumpkin and puts it into a brownie, then combines that with the flavor and texture of a chocolate chip cookie. They’re super easy to make and even easier to serve. Here’s how to make them.
Equipment Needed
- hand mixer OR stand mixer
- large mixing bowl
- measuring cup
- measuring spoons
- cooling rack
- parchment paper
- brownie baking dish
Ingredients
- 2 cups flour
- 1 tbsp pumpkin pie spice
- 1 tsp baking soda
- 1/2 tsp kosher salt
- 1 cup unsalted sweet cream butter, softened
- 1 large egg
- 2 tsp pure vanilla extract
- 1 cup canned pumpkin puree
- 1 1/2 cup semi sweet chocolate chips
- 1 ½ cup semi sweet chocolate chunks
- nonstick cooking spray
Instructions
Preheat the oven to 350 degrees f.
Line a brownie baking dish with parchment paper, then spay with nonstick cooking spray and set aside.
Place the flour, pumpkin pie spice, baking soda and salt into a large mixing bowl and whisk to combine. Set aside.
Use a mixer to cream together the butter and sugar until light and fluffy.
Mix in the egg and vanilla and beat until combined.
Mix in the pumpkin puree and beat until combined.
Gradually mix in the dry ingredients until combined.
Fold in ¾ cup of the semi sweet chocolate chips and the chocolate chunks.
Spread the batter into the brownie baking dish.
Sprinkle the remaining chocolate chips and chunks onto the batter.
Bake in the oven for 30-45 minutes or until a toothpick comes out clean.
Allow to cool completely before cutting.
Serve and enjoy!
