This Pressure Cooker Stuffed Peppers recipe is possibly the easiest stuffed pepper recipe you’ll ever see. Just mix the filling, stuff the peppers and let your pressure cooker do the rest. You don’t even have to saute the ground beef! This recipe is perfect for busy weeknights because it comes together easily in about half an hour. The dish is gluten-free if your sauce and seasoning are gluten-free. Here’s how I make Pressure Cooker Stuffed Peppers.

Instructions

Plug in the electric pressure cooker.

Cut the top off of the peppers.

Remove the seeds from the peppers and clean out the insides, then set aside upside down to allow any excess water to drain.

Place the ground beef into a large mixing bowl.

Add the uncooked rice, raw onion, seasoning and sauce to the bowl and combine thoroughly.

Spoon the beef mixture into the hollowed out peppers, putting about a third of the mixture into each pepper.

Place the cover onto the pot and close to seal.

Set the pressure cooker to cook on manual high pressure for 20 minutes.

Once the cooking cycle has finished allow the pressure to release naturally for 10 minutes.

Remove the steaming basket from the pot, then remove the peppers from the basket.

Sprinkle the shredded mozzarella on top of the peppers.

Serve the peppers immediately with salt and pepper to taste.

  • 1x bag Success Boil In Bag White Rice (uncooked)
  • 1/2 cup chopped raw onion
  • 3/4 cup tomato or red sauce
  • 1/4 cup shredded mozzarella cheese
  • 1 tsp Italian seasoning
  • 1/2 cup water

This seems to be a pretty dish with a lot of great flavors. I think few of this makes you quite full and satisfied already. I know this is super good.

Yum, what a great family meal. The presentation is great and I'm sure my daughters would be willing to at least try this meal. My picky eaters are hard to impress but this recipe might be a win in the kitchen.
