Can we talk about ravioli for a moment? Canned ravioli is something that always seems to go over well with kids. My oldest is 23 and still enjoys it. Me, I prefer to go with a frozen ravioli so that I can put whatever sauce I want on there. My favorite sauce is a thick meat sauce. Recently I decided to try my hand at making some ravioli in the electric pressure cooker.

After getting the frozen ravioli out of the freezer, I went into the cabinet and grabbed a big can of tomato sauce. Wanting to give the dish a little more texture I also grabbed a can of diced tomatoes. I was in the mood for meat sauce, so I decided to try cooking some ground beef right along with the ravioli. You all know I love cheese, so you won’t be surprised to know I added some cheese to the dish. I chose ricotta not just to thicken the sauce, but to give the dish a smoother, cheesy flavor. I also added some shredded mozzarella, wanting a really cheesy flavor.

Ingredients

  • 2x 12 oz frozen mini cheese ravioli
  • 1.25 lbs ground beef
  • 1x 29 oz can tomato sauce (I used Hunt’s)
  • 1x 14.5 oz can fire roasted diced garlic tomatoes
  • 1/2 cup ricotta cheese
  • 1 cup shredded mozzarella cheese

Instructions

Plug in the pressure cooker and set it on saute.

Put the ground beef into the pot and brown the meat.

Once the beef isn’t pink, add the ravioli, tomato sauce and diced tomatoes to the pot.

Use a silicone spoon to ensure that the ravioli is covered.

Place the lid onto the pressure cooker and close it to seal.

Set the pressure cooker to cook for 3 minutes on manual high pressure.

Once the cooking time has finished, do a quick pressure release.

Take the lid off of the pressure cooker and stir the contents of the pot.

Add the ricotta cheese and the shredded mozzarella cheese to the post and stir well to combine until all cheese is melted.

Serve and enjoy!

So easy! I was born in Russia and we make something similar, called “pelmeni.” I could totally use this recipe with pelmeni. We make them at home in large batches and freeze for use later.
