Name a meal that almost everyone has tried at one point in their life or another. One possible answer is sloppy joes. I guarantee that anyone of school age has either had a sloppy joe or at the very minimum knows what a sloppy joe is. A sloppy joe is a sandwich made with a mixture of ground beef, a tomato product like ketchup, and some seasonings.

After a recent cookout, I had lots of extra ground beef and hamburger rolls. As I tried to figure out what to do with these things besides make burgers, I thought it would be fun to try putting a spin on the traditional sloppy joe. I decided to use BBQ sauce to make my sloppy joe, with the hopes of making something with a little sass. I also happened to have a pound of uncooked bacon in the fridge that had to be cooked so decided to use that too. The resulting sloppy joes delighted the whole family.

Pressure Cooker BBQ Bacon Cheeseburger Sloppy Joes combines tender, juicy ground beef with crispy bacon and bathes it in BBQ sauce. These tasty sandwiches take very little effort to make and will be a meal that your family asks for over and over again.

Here’s how I make Pressure Cooker BBQ Bacon Cheeseburger Sloppy Joes.

Equipment Needed

Ingredients

  • 2 lb ground beef
  • 1 lb thick-sliced bacon, cut into bite sized pieces (I used Oscar Mayer)
  • 1-1 .5 cups onion, amount and whether diced or minced depend on your preference
  • 1 cup BBQ sauce (I used Sweet Baby Rays Original)
  • 1-2 cups shredded cheddar cheese
  • 8 hamburger buns

Instructions

Plug the electric pressure cooker in.

Cut the bacon up into bite sized pieces and put it into the pot.

Select the saute/brown setting and cook the bacon until it’s starting to crisp.

Remove the bacon and set aside on a plate. It will look tempting and only appear to become moreso as it sits. Don’t eat it all or your sloppy joes will be very lame.

Add a little splash of water to the pot and deglaze the pot.

Place the ground beef into the pot and select the saute/brown setting. Brown the ground beef.

When the ground beef is cooked most of the way, add in the onions and continue to saute until the beef is no longer pink and the onions are turning soft and translucent.

Add the BBQ sauce to the pot and stir.

Put the lid onto the pot and close to seal.

Set the pressure cooker to cook on manual high pressure for 4 minutes.

Once the cooking time has completed, do a quick pressure release.

Stir the beef mixture well.

Add the bacon to the pot and stir well.

You can add the shredded cheese to the beef mixture now for a mixture that has cheesy flavor through and through. This will probably thicken up the beef mixture a bit. Or, if you prefer, you can wait and sprinkle the cheese on top of the beef when you’re getting ready to serve.

Should you find the beef mixture isn’t thick enough for your liking, you can add a little corn starch to the pot and stir until the mixture reaches the desired thickness.

Scoop the mixture onto the hamburger buns and serve immediately.

OK now this sounds absolutely delicious – I don’t have a pressure cooker but I’ve been reading so much into the things you can make in them I need to change that. This is definitely something I would go for as a first try!
