This past week, I noticed “Taco Bell” brand shredded cheese was on sale. I looked at the five different varieties of cheese available and decided to buy a bag of the Zesty Ranch variety to experiment with. I had no specific plan on what to do with it. When I decided to make a pressure cooker spaghetti with bacon, I decided that would be a decent opportunity to try the ranch cheese. According to the bag, Taco Bell Zesty Ranch shredded cheese is Monterey Jack cheese with ranch seasoning. I found that the cheese did give the spaghetti a surprising amount of flavor. Hubby and my oldest both really enjoyed it.  I’d be happy to make it for them again, and I’m thinking I might pick up one of the other varieties to try as well.

Here’s how I made Pressure Cooker Bacon Garlic Ranch Spaghetti.

Equipment Needed

Ingredients

  • 1 lb spaghetti, pieces broken into thirds
  • 1 cup real crumbled bacon
  • 1x 7oz bag Taco Bell Zesty Ranch shredded cheese
  • 5 cups chicken broth
  • 3 tsp minced garlic
  • 1/2 cup light cream
  • extra virgin olive oil

Instructions

Plug in the electric pressure cooker.

Place a thin layer of olive oil into the bottom of the pot.

Select the saute or brown setting and saute the bacon and minced garlic in the olive oil.

Once the bacon has browned, add the spaghetti pieces to the pot.

Add in the broth, making sure to cover as much of the pasta as possible.

Set the pressure cooker to cook for 5 minutes on manual high pressure.

Once the cooking time has finished, do a quick pressure release.

Stir the contents of the pot.

Set the pressure cooker to the brown or saute setting.

Add in the cheese, followed by the light cream.

Stir well to combine thoroughly.

Serve immediately.
