Pressure Cooker Bacon Cheddar Egg Bites are perfect as a quick snack or breakfast on the go on a busy day. These tasty bite-sized treats come together quickly and easily. The recipe calls for simple ingredients you probably have on hand. The pressure cooker does the work, freeing your time and energy for other things.

These bacon cheddar egg bites can be frozen. If you want to freeze your egg bites, let them cool first, then store in the freezer in an airtight container or ziploc. To defrost, place the egg bites onto a plate and cover with a damp paper towel, then heat for 1-2 minutes depending on microwave wattage, egg bite size, and quantity.

A few tips for making this recipe. Place a small piece of foil or parchment paper on top of each of the trays before starting the cooking cycle. The foil will help prevent condensation from the lid from dripping down onto the egg bites. Use a measuring cup to help you pour the egg mixture into the trays without making a mess as you would if you tried pouring from a bowl or using a spoon. If your trays are prepared properly you should have little to no problems getting the egg bites out. I like to put a salad plate on top of the tray and turn it over, that way the bacon cheddar egg bites literally slide out and wind up being right side up.

  • 8 eggs
  • 1/2 cup cooked bacon
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup heavy cream
  • 2 tsp dried parsley flakes

Pressure Cooker Bacon Cheddar Egg Bites Instructions

Plug in the pressure cooker.

Pour one cup of water into the pot.

Place the eggs, heavy cream and dried parsley flakes into the mixing bowl.

Whisk the egg mixture until it’s thoroughly combined.

Cut the bacon into small pieces.

Liberally coat the baby food trays with nonstick cooking spray. Be sure to cover every bit of each cavity or you may have a difficult time in getting the egg bites out whole or cleaning the tray after.

Place a little bacon into each cavity in both trays, distributing it evenly.

Pour a little of the egg mixture into each cavity in both trays, until each cavity is between 1/2 and 3/4 of the way full.

Sprinkle a little shredded cheddar cheese into each cavity.

Place a small piece of foil over of each silicone tray.

Place one tray onto a steamer rack with a handle and lower the rack into the pot.

Place the second tray on top of the first tray.

Put the lid onto the pressure cooker and close to seal.

Set the pressure cooker to cook on manual high pressure for 10 minutes.

Once the cooking time has finished, let pressure release naturally for 5 minutes and then do a quick pressure release.

Remove the trays from the pot.

Gently turn each of the trays over and the egg bites should slide right out.

Serve immediately and enjoy!
