When entertaining during the summer you can’t beat grilling. It’s a great way to cook all sorts of things without heating up the kitchen. When it comes to pairing sides with grilled meats, you can’t help but think of macaroni salad.

One of the things hubby and I agree on is that most store bought macaroni salads taste way too vinegary. Yuck! One of the tastiest macaroni salads I’ve ever had was Amish macaroni salad. I had it in Amish country, and Amish macaroni salad is not like your typical macaroni salad, instead it’s on the sweet side. How do you make it sweet? Instead of adding things that result in a stronger flavor like vinegar and spanish onion, you add sweeter things like red peppers, sweet onion and sugar. Yes, sugar. It sounds kind of strange but it gives the salad a really great flavor. The great thing about this recipe is that you can make it all at one time in an electric pressure cooker, which means you don’t have multiple pots to watch, stir and wash, and you aren’t heating up the kitchen by cooking on the stove.

Here’s how I make Pressure Cooker Amish Macaroni Salad.

Equipment Needed

Ingredients

  • 1 lb elbow macaroni
  • 4.5 cups water
  • 2 cups mayonnaise
  • 1/3 cup sugar
  • 3 tbsp yellow mustard
  • 2-3 tbsp sweet relish, to taste
  • 4 hard boiled eggs, diced
  • 1.5 cups red bell pepper, diced
  • 3/4 cup sweet onion (I used a Vidalia), diced
  • 3/4 cup celery, diced

Instructions

Plus in the electric pressure cooker.

Pour a little water into the bottom of the pot.

Add the pasta to the pot and pour the remainder of the water over it.

Make sure all of the pasta is covered with water.

Place the tall trivet into the pot.

Put the uncooked eggs into the silicone steamer basket and place the basket on top of the trivet.

Put the lid on top of the pressure cooker and close it to seal.

Set the pressure cooker to cook for 4 minutes on manual high pressure.

While the pasta and eggs are cooking prep the dressing.

Place the mayo, yellow mustard and relish into a large bowl.

Add the sugar to the bowl and stir to combine.

Dice the onion, celery and red bell peppe3r.

Once the cooking time has finished do a quick pressure release and remove the lid.

Put the cooked eggs into cold water.

Place the macaroni into a strainer in a sink and rinse it for a few minutes to cool it off.

Once the macaroni has cooled a little, add it to the bowl with the mayo mixture.

Stir well, taking care to be sure all macaroni is covered.

Add in the diced vegetables.

Dice the eggs and add them to the bowl, then give a final stir to make sure everything is combined.

Chill for 3-4 hours before serving.
