The cooked polenta in this dish is on the soft side. If you prefer your polenta a tad bit more firm, fry the slices for 3-4 minutes before placing into the baking dish.
Pepperoni Pizza Polenta Bake
- 1x 24 oz roll traditional polenta
- 16-32 thin slices of pepperoni (depends on how much pepperoni you want)
- 6 oz shredded mozzarella cheese
- 6 oz pizza sauce
- Italian seasoning
Preheat oven to 375 f.
Slice polenta roll into 16 slices, which should be approximately 1/2 inch thick.
Spray baking dish with nonstick cooking spray.
Place a thin layer of pizza sauce into the baking dish
Place the polenta slices in the baking dish.
Place the pepperoni on top of the polenta slices.
Sprinkle shredded cheese on top of each slice.
Sprinkle Italian seasoning as liberally (or not) as you like.
Bake for 16-18 minutes.
