Peanut Butter Chocolate Chip Cheesecake Bites

Here’s how to make them.

Equipment Needed

Ingredients

Chocolate Cookie Layer Ingredients

  • 1 1/2 cups flour
  • 3 tbsp cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp kosher salt
  • 10 tbsp unsalted butter, softened
  • 1 cup sugar
  • 2 large egg yolk
  • 2 tbsp whole milk
  • 2 tsp pure vanilla extract

Peanut Butter Cheesecake Filling Ingredients

  • 16 oz cream cheese, softened
  • ½ cup sugar
  • 2 large eggs
  • ½ cup peanut butter
  • 1 tsp pure vanilla extract

Peanut Butter Chocolate Ganache Ingredients

  • ½ cup semi sweet chocolate chips
  • 3 tbsp smooth peanut butter
  • 2 tbsp coconut oil

Topping Ingredients

  • 2 packages Ben and Jerry’s Peanut Butter Chocolate Chip Cookie Dough Bites

Instructions

Chocolate Cookie Layer Instructions

Preheat the oven to 350 degrees f.

Line a cupcake pan with cupcake liners.

Place the flour, cocoa powder, baking soda and salt together in a large mixing bowl and whisk together.

Use a stand mixer or a hand mixer and large glass mixing bowl to beat together the butter and sugar until light and fluffy.

Beat in the egg yolk, milk, and vanilla extract.

Gradually mix in the dry ingredients until combined.

Spoon about 1 tbsp of the batter into each of the cupcake liners.

Bake in the oven for about 5 – 7 minutes

Set aside to cool.

Peanut Butter Cheesecake Instructions

Place the cream cheese and sugar into a large mixing bowl and beat until combined and smooth.

Beat in the eggs one at a time until combined.

Beat in the peanut butter and vanilla until combined and smooth.

Divide the cheesecake batter evenly amongst the cupcake liners.

Bake in the oven for 20-25 minutes or until the edges are slightly golden.

Remove the mini cheesecakes from the oven and allow to cool completely.

Place into the fridge overnight.

Peanut Butter Chocolate Ganache Instructions

Place the chocolate chips, peanut butter and coconut oil into a microwave safe bowl and combine.

Place the bowl into the microwave on heat in 45 second increments until the mixture has melted and become smooth.

Divide the ganache evenly onto the top of the cheesecakes.

Place the cheesecakes into the fridge for an hour to allow them to harden.

Topping Instructions

Top each of the cheesecake bites with some of the peanut butter cookie dough bites.

Serve and enjoy!
