  • 2 tbsp extra virgin olive oil, divided
  • 4x 6-oz. fresh haddock fillets
  • ¾ cup parmesan cheese, freshly grated
  • 4 medium tomatoes, seeded and diced
  • 2 cups fresh basil leaves, thinly sliced

Instructions

Preheat the oven to broil.

Line a large, rimmed baking sheet with a piece of aluminum foil or parchment paper.

Arrange the haddock fillets on the baking sheet.

Brush the haddock with a tablespoon of olive oil before sprinkling with the Parmesan cheese.

Lightly season each filet with sea salt and black pepper, if desired.

Place the haddock into the preheated oven and broil for 6-8 minutes, or just until the fish is golden brown on top and flakes easily with a fork.

While the fish broils, toss the tomatoes and basil with the remaining olive oil and season with salt and black pepper, as desired. Set aside.

Remove the haddock from the oven and set aside on a cooling rack.

Transfer the cooked haddock to individual serving plates.

Top each filet with an equal portion of the tomato and basil mixture before serving.
