Oreo Pumpkin Cheesecake Brownie Bars
Oreo Pumpkin Cheesecake Brownie Bars are perfect for fall baking. They are easy to make, only requiring that you mix together a number of pantry ingredients. Baking warm the house and delights the nose. And, family and friends will enjoy these moist and flavorful bars so much that they’ll be begging you for more. Here’s how to make them.

Brownie Ingredients
- 1x 13×9 box of milk chocolate brownie mix
- 3 large eggs
- ¼ cup water
- ½ cup canola oil
- 1 family size package of Halloween Oreos
- ½ cup mini chocolate chips
Pumpkin Cheesecake Ingredients
- 12 oz cream cheese, softened
- ⅔ cup pumpkin puree
- ⅔ cup sugar
- 2 large eggs
- 1 tsp pure vanilla extract
- 1 tsp pumpkin pie spice
- ⅛ tsp kosher salt
Instructions
Preheat the oven to 350 f.
Line a 9×9 baking pan with parchment paper.
Place all of the brownie ingredients into a large bowl and combine with a hand mixer.
Pour the batter into the baking dish.
Top the brownie batter with a layer of whole Oreos and set aside.
Place the cream cheese, pumpkin puree, sugar, vanilla, pumpkin pie spice and salt into another large mixing bowl and beat together until combined and smooth.
Beat in the eggs, 1 at a time until combined and smooth.
Pour the cheesecake batter over the brownie batter.
Chop up about 5-8 Oreos and sprinkle on top of the cheesecake batter.
Sprinkle the ½ cup of mini chocolate chips on top of everything.
Bake in the oven for about 75 minutes or until the center is set and the sides start to peel away from the parchment paper.
Allow to cool to room temperature before placing into the fridge to cool overnight.
Cut into bars before serving.
Serve and enjoy!

These treats so really well with a big glass of cold milk. They also go well with coffee. On the off chance these bars aren’t flavorful enough for you, you could even top them with a little whipped cream or ice cream.
