One-Pot Gluten-free Stuffed Pepper Soup recipe

Hubby loves stuffed peppers. I don’t especially love them so I don’t make them as often as he’d like. I decided to put together some soup using the ingredients I’d use in stuffed peppers. I wanted to make it as a one-pot recipe, so I used my Ninja 3-in-1 Cooking System. Hubby loved it madly and said it was the closest thing to his Mom’s stuffed pepper that he’d ever had. Which made me very happy, so I’ll be making it again for him. Here’s how I made it.

One-Pot Stuffed Pepper Soup

INGREDIENTS

  • 1 lb ground beef
  • 1/2 small onion
  • 3 peppers (I used 1 yellow, 1 red and 1 green)
  • 28 oz can diced tomatoes (I used Del Monte basil, garlic, oregano seasoned variety)
  • 1x 10.75 oz can tomato soup (condensed)
  • 32 oz beef stock
  • 2 cups white rice
  • salt and pepper to taste

INSTRUCTIONS

Dice the onion and set aside. Dice the peppers and set aside.

Set Ninja to stovetop high.

Brown the ground beef.

While beef is browning add in the onions and peppers as well.

Once the beef is browned add in the diced tomatoes, the can of condensed soup and the beef broth.

Stir well.

Bring to a boil.

Add the rice and cook for approximately 15-20 minutes, until rice is tender.

Serve with salt and pepper to taste.

What a great idea to make stuffed peppers into a soup. My family doesn’t love stuffed peppers, but I think they’d change their minds if I served them in soup form.

I’m with your hubby on this one – I love stuffed peppers! But they are a lot of work to assemble. Your delicious soup solves the problem…all the great flavor without all of the work!

I’ve never heard of stuffed pepper soup – what a great idea!! Funny timing, too. I dont make stuffed peppers often at all, but I was just thinking about them earlier today. 🙂
