No-Bake Berry Cheesecake Parfaits are tasty treats with a lot of flavor and texture. They’re great for dessert, snacking and entertaining. These parfaits get their rich texture by combining cream cheese and greek yogurt. Their interesting flavor comes from using fresh fruit and nuts. This recipe requires no baking. You won’t need much time to put them together, but remember to allow at least 2 hours to let them chill sufficiently to serve. Here’s how to make them.

This recipe makes 4 servings.

- hand mixer
- large mixing bowl
- measuring cups
- measuring spoons
- cutting board
- 4x parfait dishes or mason jars
- ¼ cup raw almonds
- ¼ cup raw pecans
- 3 pitted dates, roughly chopped
- ¼ tsp ground cinnamon, plus more for garnish
- 4 oz cream cheese, room temperature
- 1 cup full-fat Greek yogurt
- 3 tbsp honey or maple syrup
- 1 tsp real vanilla extract
- 1 cup strawberries, chopped
- 1 cup raspberries
- ½ cup blueberries
Place the almonds, pecans, dates, and cinnamon into the food processor’s bowl.
Pulse until the mixture starts to form a ball and the nuts are nicely broken down.
Divide the nut crust between 4 individual serving dishes or jars and set aside.
Place the cream cheese, Greek yogurt, honey, and vanilla in a large mixing bowl and beat with an electric mixer until smooth, then set aside. If by chance the cream cheese isn’t fully softened, beat it first before adding the other ingredients.
Divide half of the cheesecake mixture between the 4 serving dishes or jars and divide half of the berries among the individual dishes. Repeat this process with remaining cheesecake mixture and fresh berries.
Place the parfaits in the refrigerator for at least 2 hours to chill.
Garnish with ground cinnamon or an extra drizzle of honey, if desired.
