As I mentioned the other day, some deli meat got pushed to the back of the fridge and I had to do something with it before it turned. I had a pound of beautiful, lean deli roast beef. We enjoy beef stroganoff here, which I typically make with ground beef. I decided to make it with the deli roast beef. This saved me the time of cooking the ground beef. And, we really liked the texture of the sliced roast beef as a change from the chunkiness of ground beef. This is a dish that we’ll be having again. Here’s how I made it.
Easy One-Pot Beef Stroganoff
- 1 lb egg noodles (I used extra wide)
- 1 lb deli sliced roast beef
- 16 oz sour cream
- 10.5 oz can cream of onion soup
- 1 tbsp garlic powder
- 1 tbsp onion powder
- salt and pepper to taste
Set Ninja to stovetop high.
Boil noodles until al dente.
While the noodles are cooking, cut the sliced roast beef into bite sized strips.
When noodles are cooked, drain and return to the Ninja.
Add remainder of ingredients except the roast beef and stir well.
Add the roast beef.
Set Ninja to slow cooker medium and cook for 15 minutes.
Serve immediately with salt and pepper to taste.
