Gluten-free Club Frittata #Recipe

Club sandwiches with ham, turkey, bacon and cheese are one of my faves. I’ve taken the club sandwich off of the bread and added eggs, turning it into a tasty Gluten-free Club Fritatta! Hubby and my youngest devoured it and there were no leftovers. Here’s how I made it.

Preheat the oven to 350.

Dice the tomato and onion. Cut the meats and cheeses into small pieces.

Add all of the ingredients to a large bowl and mix well.

Pour the contents of the bowl into the caldero and bake for 20 minutes.

Serve immediately with salt and pepper to taste.

My children love frittatas so much that a whole dish can be gone in minutes. I love making mine with whatever veggies I have on hand, and a protein source, like ham or bacon or diced grilled chicken.

Believe it or not, I have never made a Frittata. I like your recipe for Club Frittata. What at neat idea. I would have to make it without the ham and bacon as I don’t eat meat.

Believe it or not I have never had a frittata!! This one kind of reminds me of a Western Omelet–which I do love. Time for me to try a frittata.
