Mexican Pasta Salad

- 1 cup plain greek yogurt
- 1 tbsp lime juice
- 1/2 tsp honey
- 1/2 tsp cumin
- 1/2 tsp paprika
Pasta salad ingredients
- 16 oz box of bow tie pasta
- 8 oz can of corn, drained
- 8 oz can of black beans, drained
- 1 green bell pepper, chopped
- 1 tomato, chopped
- 1/2 yellow onion, chopped
- 1/4 cup of cilantro, chopped
- 1 small container of feta cheese
- 1 orange pepper for topping
- 1 red pepper for topping
Start out by making the dressing.
Combine all of the dressing ingredients in a medium sized bowl and mix with a whisk.
Set the dressing in the fridge until the pasta is ready
Now it’s time to cook the pasta.
Add water to the pot and bring to a boil
Once the water is boiling, add the pasta and cook according to the instructions until it’s done.
While the pasta is cooking, drain the corn and black beans.
Chop the green pepper, tomato, onion and cilantro and set aside.
Once the pasta is cooked, drain the water and add the pasta to a large mixing bowl.
Let the pasta cool for a few minutes, mixing occasionally so that the pasta doesn’t become sticky.
Once pasta has cooled, add the corn, black beans, green pepper, tomato, onion and cilantro.
Add the dressing and mix well.
Add the feta cheese.
When serving, top with some more feta cheese and cilantro. You can also add some orange and red pepper slices for presentation.
