Mardi Gras Mini Cheesecakes
Cheesecake is one of my favorite desserts ever. Mini cheesecakes are great because they are the perfect serving size. They’re great for snacking and entertaining, and they’re just so cute. These Mardi Gras Mini Cheesecakes are delicious as is, but the fresh whipped cream icing adds a little something special because of the combination of flavors and textures it creates. The colorful sprinkles are a simple and fun way to add color, making them the perfect treat for your Mardi Gras celebration, welcoming spring, or any time. Here’s how to make them.
This recipe makes 24 Mardi Gras mini cheesecakes.
Equipment Needed
- mini cupcake pan
- mini baking cups
- 2x medium mixing bowls
- large mixing bowl
- measuring cups
- measuring spoons
- hand mixer
- large piping bag with star tip
Ingredients
Graham Cracker Crust Ingredients
- ¾ cup graham cracker crumbs
- 1 ½ tbsp sugar
- ¼ cup unsalted butter, melted
Cinnamon Filling Ingredients
- 1 cup brown sugar
- 5 tbsp ground cinnamon
- ½ cup melted butter
Cheesecake Filling Ingredients
- 2x 8 oz packages cream cheese, softened
- ½ cup sugar
- ½ cup sour cream
- ¾ tsp pure vanilla extract
- ⅛ tsp kosher salt
- 2 large eggs
Fresh Whipped Cream Ingredients
- 1 cup heavy whipping cream
- ½ cup powdered sugar
- 1 tsp pure vanilla extract
- purple, green and yellow sprinkles
Instructions
Graham Cracker Crust Instructions
Preheat the oven to 325 degrees f.
Line a cupcake pan with cupcake liners.
Place all of the graham cracker crust ingredients into a medium mixing bowl and mix until combined.
Using a tablespoon, scoop the crust mixture into the cupcake liners.
Use a flat bottomed round cup to press the cup into the crust mixture, until the crust is firm.
Set aside.
Cinnamon Filling Instructions
Combine all of the cinnamon filling ingredients into a medium sized bowl and mix until combined.
Set aside.
Cheesecake Filling Instructions
Place the sugar and cream cheese into a large glass mixing bowl and use a hand mixer to eat together until combined and smooth.
Beat in the sour cream, vanilla and salt until combined.
Beat in 1 egg at a time until combined.
Scoop 1 1/2 tbsp of the cheesecake mixture into each crust.
Spoon 1 tbsp of the cinnamon filling mixture onto the cheesecake.
Spoon another 1 ½ tbsp of cheesecake on top.
Swirl in 1 tsp of the cinnamon filling mixture on top.
Bake in the oven for 17-22 minutes or until the edges of the mini cheesecakes are firm and are turning a really light golden brown.
Allow the cheesecakes to cool for a few hours in the fridge before decorating and serving.
Fresh Whipped Cream Instructions
Place the fresh whipped cream ingredients into a medium mixing bowl and beat together until stiff peaks form.
Scoop the fresh whipped cream into the piping bag.
Pipe dollops of the fresh whipped cream on top of the cheesecakes.
Sprinkle some of the colored sprinkles on top.
Serve and enjoy!
