Remember the Bacon Maple Syrup Pancake Mix Cookies I mentioned earlier this month? They were a terrific way to use up leftover pancake mix (or just a creative reason to make a batch.) I thought it would be fun to change the cookie up by mixing in something sweet – chocolate chips. It’s still just as easy to make, and with only 5 ingredients and a few minutes for prep it’s a great recipe for a busy day. Hubby liked this sweet and savory cookie even more then the first one. Here’s how I made them.
Maple Bacon Chocolate Chip Pancake Mix Cookies
This recipe makes 24 cookies.

- 2 cookie sheets lined with parchment paper. (Alternatively, you could use a silicone baking mat.)
- mixing bowl
- measuring cup
- wire cooling rack
- pot holders
- 2 cups Buttermilk Pancake Mix
- 1/2 cup Maple Syrup
- 1/2 cup butter, softened
- 1/2 cup shredded bacon
- 1/2 cup mini chocolate chips
Preheat oven to 350 f.
Place all ingredients except the bacon in a mixing bowl and combine thoroughly.
Add the bacon and mix well.
Add the chocolate chips and mix well.
Form small balls with the mixture and place onto the cookie sheet.
Bake for 10-12 minutes, until edges are turning golden brown.
Set cookies on a cooling rack for 5 minutes before serving.
