Hubby loves ravioli. I often get spinach ravioli that I’ll use just for a meal for just him, because it’s his favorite kind of ravioli. Spinach is also one of his favorite vegetables, if not the favorite. I had picked up a large bulk package of sweet Italian sausage and was figuring out different things to make with it. I had the spinach ravioli in the freezer and decided to use the sausage with that. In order to let the dish really get a good spinach flavor, I decided to add spinach to the dish as well. I used just enough red sauce to let the dish cook, not wanting it to be a dish with a lot of sauce or a soup. Hubby absolutely loved the finished dish and has asked me to try to make it often for him. - electric pressure cooker (I used a 6 qt Instant Pot)

- 1 pound sweet Italian sausage links
- 12 oz frozen spinach ravioli
- 10 oz frozen spinach
- 12 oz red pasta sauce (I used a garlic and onion sauce)
- 1 cup chicken broth
- 1 cup shredded mozzarella cheese
- olive oil
Create a thin layer of olive oil on the bottom of the pot.
Set the Instant Pot to saute.
Place the sweet Italian sausage links into the pot and brown them.
Once the sausage has finished browning, remove it from the pot.
Pour the chicken broth into the pot and deglaze any pieces of sausage that are stuck to the bottom of the pot.
Slice the sausage into bite sized pieces.
Return the sausage to the pot.
Place the ravioli on top of the sausage.
Pour the pasta sauce over the sausage, trying to be sure that all of the ravioli is covered.
Set the Instant Pot to cook on manual high pressure for 2 minutes.
Once the cooking cycle has finished do a quick pressure release.
Add the spinach to the pot and let it cook down.
Once the spinach has cooked down, add the shredded mozzarella cheese to the pot and stir well.
