Instant Pot Pizza Meatloaf is a fun, round meatloaf featuring some of your favorite pizza toppings. Cooking this meatloaf in the Instant Pot cuts down on the heat generated in the kitchen as well as cooking time. This recipe is easily gluten-free as written.

I like to change up my meatloaf frequently. I have a number of different recipes, some gluten-free and some not. My youngest loves pizza. Of all of the meatloaf versions that I make, the pizza one is his favorite. I use some pizza related ingredients instead of more traditional ones, and I form the meatloaf in a round shape. With the heat of summer right around the corner I decided to try making a pizza meatloaf in the Instant Pot, to cut down on the heat generated in the kitchen as well as cooking time. The finished dish was a hit that we all enjoyed. Now to be clear, the meatloaf will not taste just like pizza. You can customize this meatloaf in any way you like for personal preferences or to achieve a more pizza-like flavor. Here’s how I make it.

  • large mixing bowl
  • measuring cups
  • measuring spoons
  • 7″ nonstick springform cake pan
  • silicone spatula
  • Instant Pot silicone trivet

Ingredients

  • 3 lbs ground beef
  • 1/2 cup instant mashed potato flakes
  • 1 cup parmesan cheese
  • 6 slices mozzarella cheese
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1/4 jar pizza sauce
  • 1 cup water
  • OPTIONAL – pepperoni, olives, onions, mushrooms or other pizza toppings

Instructions

Place all of the ingredients except the sliced mozzarella cheese and the water into a large mixing bowl and combine thoroughly. (NOTE – You could put some minced pepperoni into the meatloaf mix if you like.)

Pour one cup of water into the Instant Pot and then place the trivet into the Instant Pot.

Spray the pan with nonstick cooking spray.

Put half of the meatloaf mixture into the pan.

Put 4 of the mozzarella slices on top of the meat.

Place the remaining half of the meatloaf mixture on top of the cheese.

Pinch and smooth around all of the edges to make sure that the meatloaf is closed.

Set the Instant Pot to cook on manual high 30 minutes.

Preheat the oven to 350 f.

Place the remaining 2 slices of mozzarella cheese on top of the meatloaf.

Spread a few dots of pizza sauce on top of the cheese.

If you want to place a few pizza toppings on top of the meatloaf such as pepperoni or peppers, place them on now.

Bake for 5 minutes until the cheese on the top has melted.

Serve immediately.

    I don’t have an Instant Pot, but I do have a pressure cooker. This looks great. As a kid I hated meatloaf, but now I LOVE it. Great flavour profile. Leftovers would make great sandwiches too.

    What a great trick, using the spring form pan! My husband loves meatloaf, and like you, I have several recipes I use. This one will be next on the list to try. Who doesn’t love pizza flavors?

    We didn’t really have spring here in the Seattle area, it just jumped from winter to summer and I didn’t have time to acclimate. As a result, I want ALL the recipes that reduce heat generated in the house! I haven’t invested in an instant pot yet, but I may just need to!
