I got a canning set and am starting to try making different homemade things and canning them. One of my firrst projects was salsa, for which I needed to skin the tomatoes. Some people call it peeling the tomato as well.
First, remove the stem and wash the tomatoes.
Place a large pot of water on the stove to boil.
While the water is coming to a boil you need to prep the tomatoes.
Score (cut) a shallow X on the bottom of the tomato.
Score a circle around the stem on the top of the tomato.
Fill a large bowl with cold ice water.
Once the water has come to a boil, place the tomatoes into the boiling water.
After about a minute, you should see the skin start to peel.
Remove the tomatoes and place them into the bowl of ice water.
Leave the tomatoes in the ice water bath for 5-10 minutes, so that they stop cooking inside.
Once the tomatoes have cooled off, remove them from the ice water bowl.
On the top where the circle is use a paring knife and cut out the stem.
Start on the bottom where the X is, peeling the skin way. It should come off easily in large pieces because of the circle on the top and the x on the bottom.
