Air Fryer Ricotta Stuffed Tomatoes
I love tomatoes. I love cheese. I love to stuff tomatoes, and frequently when I do I use cheese. Creamy ricotta melted inside a tomato is a little piece of heaven. Add in a little cheddar and some good seasoning and you have a great lunch or snack that’s ready in under 20 minutes. Here’s how I make Air Fryer Ricotta Stuffed Tomatoes.
- 4 beefsteak tomatoes
- 2 cups ricotta cheese
- 3/4 cup shredded sharp cheddar cheese
- 2 tsp Sicilian Blend seasoning
- 1/2 tsp sea salt
- spray olive oil
Cut the tops off of the tomatoes and discard.
Use a spoon or melon baller to remove the tomato pulp from the inside of the tomato. Discard the tomato pulp.
Gently rinse the inside of the tomatoes and place upside down on a paper towel to drain.
Put the ricotta cheese into the mixing bowl.
Add the seasonings to the bowl and stir.
Place the shredded cheddar cheese into the bowl and combine thoroughly.
Fill each of the hollowed out tomatoes with the cheese mixture.
Set the air fryer to cook at 370 f. On my air fryer if starting from cold I let it heat up for 3 minutes.
Spray the air fryer’s tray with olive oil.
Place the tomatoes onto the tray.
Cook for about 15 minutes, until the cheese on the top is melted and turning golden brown.
Remove from the air fryer.
