I was in the mood for homemade egg rolls again recently. I am fascinated by the egg roll wraps and how many things you can do with them. Instead of making sandwiches I decided to put some cold cuts in the egg roll wraps this time. They were pretty yummy. I added a little mild salsa for moisture and flavor, you could easily use something hotter or even a dressing if you like. The great thing about these is it’s so easy to customize to your own taste. Here’s how I made them.
Ham And Cheese Egg Rolls
- 6 slices imported ham
- 3-4 slices deli sliced American cheese
- 1 cup salsa
- 4-6 egg roll wraps (4 is if you make them thicker and packed, 6 is if you go a little thinner. I made 6.)
- olive oil
Preheat the oven to 400 f.
Cut or break the cheese slices into halves or thirds.
Place a slice of ham on top of each egg roll wrap.
Place a teaspoon or so of salsa on top of the ham. Keep it in the middle, if it gets everywhere it will be hard to close the egg roll.
Place two pieces of the cheese on top of the ham.
Fold the egg roll wrap according to instructions on the package. Place seam side down on baking sheet.
Brush or rub tops of egg rolls with a light coating of olive oil.
Bake for 10 minutes, until egg rolls are turning golden brown and starting to get crispy.
Serve immediately with a side of salsa for dipping sauce.
