We love cheese. When offered the chance to try some of Arla Dofino cheeses I gladly accepted. Arla Dofino makes Havarti, Gouda, Edam and Fontina cheeses. When wedges of Gouda and Havarti cheese arrived I did sample them almost immediately. But, never having made a recipe with either of those cheeses, I wanted to try my hand at that. So I contemplated what things we liked that were simple to cook but could benefit from a tasty sauce. Gnocchi came to mind. We love it but we almost always eat it with butter. It was time to try something new! Here’s how I made it.
Gouda Cheesy Bacon Gnocchi
- 2x 14.5 oz bags frozen potato gnocchi
- 10 oz Arla Dofino Gouda Cheese
- 3/4 cup crumbled bacon
- 1 cup half and half
Boil the gnocchi.
Put the Gouda cheese and the half and half into a small to medium sized pot. Heat on low, stirring very almost constantly. Once cheese is melting add in the bacon. Continue to heat on low, being sure to keep stirring.
Drain the gnocchi and put into a large bowl.
Pour the cheese sauce over the gnocchi and mix well.
Serve with salt and pepper to taste.
