You will often find some small corn tortillas in my kitchen. I keep them there because they’re gluten-free and my son enjoys them. We often make simple sandwiches with them. I was down to the last few tortillas the other day and decided to make my son a sort of a pizza with them. He enjoyed it quite a bit and ate two of them. Here’s how I made them.
Gluten-free Corn Tortilla Pizzas With Chicken
INGREDIENTS
- 3-6 corn tortillas (I used 3 but you could use 6 if you just put less chicken on each one)
- 6 oz roasted chicken breast
- 1/2 cup ranch dressing
- 1/4 cup shredded mozzarella cheese
- Italian seasoning
INSTRUCTIONS
Preheat the oven to 375 f.
Place the tortillas on ungreased baking sheet.
Place a layer (not too thick) of ranch dressing on each tortilla, leaving a little bit around the whole edge bare.
Spread chicken on tortilla over the ranch.
Sprinkle a little cheese on top of each.
Sprinkle a little Italian seasoning on top.
Bake for 10 minutes.
Serve immediately.
